Raspberry and Vanilla Barfi

Raspberry and vanilla barfiIf you ever needed an excuse to make barfi (which you don’t by the way!) … it’s Diwali this weekend! 

Happy Diwali to everyone celebrating, may light always triumph over darkness. 


200g milk powder 

200ml double cream

1 tin condensed milk

Few drops of vanilla bean paste

Gold icing pen (optional) 

Dried raspberries to decorate 


1. Combine the double cream and milk powder to form a solid mass. 

2. pour the condensed milk and cream mixture into a saucepan and mix over a low heat until it is completely combined and starting to come off from the sides. Stir the vanilla through.

3. Pour the mixture into a Pyrex dish or moulds and allow to cool. 

4. Decorate the top with dried raspberries, using a drop of icing sugar to attach to the barfi. 

Enjoy at room temperature 😉
