Lemon and Blueberry Tart

If you prefer eating to cooking and enjoy instant gratification then you’ll love this! 

It takes longer to eat than it does to assemble… in fact it would be perfect to time as one of those ‘who can put it together the quickest’ type games (feel free to post your times in the comments). 😉

Ingredients 

Shop bought sweet pastry cases 

Good lemon curd; If you’re in the South West, I love Lemon and Lime curd from Puxton Farm Shop. 

Hand full of blueberries

Icing sugar to dust 

Cream to serve 

Method 

1. Fill the pastry case with the curd, top with blueberries and dust with icing sugar!

Ta da! 

Ideally stick them in the fridge for an hour or two before serving, but still tastes great if you can’t!
