140g caster sugar
140g self raising flour
1 tsp baking powder
2 bananas; very ripe and mashed
Preheat oven to 180C
1. Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder and bananas.
2. Pour into a loaf tin and bake for about 40-45mins until a skewer comes out clean.
3. Cool in the tin for 10 mins, then remove to a wire rack.
4. Serve warm with a dollop of ice cream or whipped cream.
