Gajrela aka carrot pud 

Carrot pud, gajrela The pictures do not do this dessert justice. I tried to fancy it up and use filers etc, but the truth is it looks like it looks but it tastes incredible. A moreish carrot dessert, super popular as an Indian dessert. 

This super easy recipe comes courtesy of my sister-in-law… thanks Nitu x


1kg of carrots, grated 

1 tin condensed milk 

500ml milk 

Handful of cardamon pods 


1. Grate the carrots – use a food processor otherwise you’ll be there for days!

2. Heat the oil in a large saucepan and add the seeds from the cardamon pods – cook for a minute then add the grated carrots and milk. Stir frequently until the carrots have softened and milk has mostly evaporated, then add the condensed milk. 

3. Stir on a low heat until the condensed milk has evaporated. 

Serve warm with a dollop of ice cream.
