Frangipane Tart

Almond, tart, raspberry, frangipane I tried to keep up as Jamie Oliver made these on one of his shows… never found the original recipe so not sure I followed his exactly. Regardless, these are bloody good and amazingly quick!


Shop bought sweet pastry tart

55g butter, room temperature

55g ground almonds 

55g caster sugar 

1 egg

A few drops vanilla essence 

Fresh or frozen berries

Raspberry jam 


Preheat oven to 180C 

1. Pour the sugar, almonds, butter and egg into a bowl and mix to combine. Add the vanilla essence. 

2. Spoon a teaspoon of the mixture into a pastry tart, add one or two berries and a teaspoon of jam. Cover with another teaspoon of the mixture, so that you can’t see the fruit or jam. Repeat in all cases. 

3. Cook in the oven for 20 minutes until golden brown. The jam or fruit may bubble over but not to worry.

4. Serve with cream or ice cream.
